The fog proof models have interior optical surfaces that won't fog due to rapid temperature changes or humidity.
You will find these to be quality binoculars that won't break should you drop them. Most pocket binoculars also feature long eye relief. More magnification always means less field-of-view. But mass production and better technologies have brought down the price substantially, so that the common person can afford them.
Night vision binoculars are very comfortable to use because we are accustomed to seeing with both eyes, but they are pricey. Capturing as much of that as possible is good as it means all the available light is getting to where you want it. Roof prism binoculars are so much easier to water and fog proof because of internal focusing. Coupled with the size of the objective is the light gathering ability of the lens and the field of view.
Ideally, you are going to lug these babies around for 10 or 20 years, so get a good pair. Check the seals periodically, and bring your binoculars in for servicing if there are signs of cracks or leaks in the seals.
